I've tried adjusting the video quality settings down to keyint=25:vqmax=7:vqmin=2, which seems to help a little bit but I think the issue is more with it not opening up enough bandwidth, rather than being unable to keep up with quality. I have my Xbox port forwarded on the Time Capsule, and I have ports 50 (found that somewhere else) forwarded as well. It will play for half a second then freeze for 2 or 3 seconds, and that's the best I can get. I've been trying to stream from my Macbook Pro to the Xbox 360 but no matter what I do I keep getting a peak bitrate of 5-7 Mb/s so the video is so choppy as to be completely unwatchable.
